Greece: Specialty Wine
• Retsina—a style of wine that gets part of its flavour from exposure to tree resins—has been made for thousands of years. Folklore says the style was discovered by chance, when pine resin was used to help seal the porous amphorae used to ferment and store wine. This retsina is produced from roditis grapes using modern, white-wine vinification techniques.

The Foreign Affair ‘Enchanted’ 2017
VQA Niagara Peninsula $17.95 (389767) 11.9% alcohol

The result is a wine that’s bright golden yellow in appearance, a nose of grapefruit, clover and tinned pears aroma. This is medium bodied on the palate with flavours of gala apples and lemon. The finish is crisp and refreshing. Try this along with baked pork chops with aside of apple sauce. (Dave Isaacs)
