• A handful of grape varieties, including Cabernet Franc, have higher amounts of methoxypyrazine, usually referred to as ‘pyrazines’. All those grapes originate in Bordeaux. It’s also said to be present more in cooler climates and lessens its effect with ripening. They can also be somewhat controlled by careful vine management. Pyrazines can produce green bell pepper, aka capsicum, aromas and flavours plus others in the savory spectrum like mint and herbs. High amounts in red wine that are detected by the average wine drinker as green bell pepper are generally considered a flaw while others have come to expect and accept them.
