Barrels were blended and the wine integrated for a further three months in a large, previously used large oak barrel. The finished wine was bottled after just over a year in oak in December 2021. It is available only at the Malivoire winery that you can access online on their website and have it delivered to your door or by ordering ahead of time and picking it up at the winery. Your call. • The following 2021 Rockway Vineyards ‘Pinot Noir’ is light in colour and barely ruby red in the glass. The grapes were hand-harvested at the end of September from their estate vineyard. The fruit was crushed into tank with the juice undergoing a five-day cold soak then warmed to an alcoholic fermentation with punch-downs twice a day. It was then pressed-off to settle in a stainless steel tank before being racked to French oak barrels, 33% new. Natural malo-lactic conversion occurred in barrel and the wine remained in barrel for an additional time of ten months before it was racked back to tank where it settled prior to being filtered and bottled.
