You might think Muscadet has no ageing potential; think again. This one, from +60-year-old melon de bourgogne vines, spent 76 months on its lees, enough time to develop a beautiful complexity both on the nose and palate. You’ll find aromas of lemon confit, ripe pear, star anise and dry chamomile. It’s round and ample on the palate with delicious flavours of Granny Smith apple, lemon confit, fennel and slate minerality. This medium-bodied unique Muscadet ends with a long. dry finish trailing savoury and saline notes. Aerate/decant 30 minutes before service and enjoy with chicken cordon bleu or baked lemon-butter cod loin. (Louise Boutin)
