• The following 2020 Malivoire Wine Pinot Gris reflects the dazzling 2020 vintage of all VQA wine regions in Ontario and it also reflects the history of pinot gris being a wandering mutant clone of ancient Burgundy Pinot Noir by its slight pink-ish hue in the glass. It was hand-harvested mid-September from mature vines of the Malivoire Estate Vineyard with the amount of sugar in the unfermented grape reaching 20 ° Brix. 87% of grapes were crushed, destemmed and sent immediately to press, While 13% was crushed and skin-soaked for 30 hours before pressing. Cool primary fermentation occurred in stainless steel and after five months of clarification it was bottled in December, 2020.
