• The following 2020 Provolo Soave was sourced from hand-harvested 80% garganega/20% chardonnay sourced in clay soil at 350 m above sea level. Fruit was cold soaked for 12 hours on skins then fermented 95% in steel tank and 5% in oak tonneaux for approximately 25 days then left on its lees before bottling.

Delicate aromas of plum and floral notes precede a racy and tang-infused pineapple and tart grapefruit pith from entry to the mouth-watering finish and aftertaste. There’s nerve and verve and plenty of lip-smacking acidity and pizzazz in this—not for the faint of palate. Pour with sushi, baked white fish decorated with lemon slices or tuna ceviche.
