A shy nose of red cherry, cranberry and strawberry with subtle earthy and mild vanilla notes introduce a medium-bodied wash of pie cherry with a sweet taste of ripe raspberry and a bay leaf savoury note. The still evolving young tannins provide structure and a grippy mouth-feel into the medium-long warm and sharp, fruity finish. This pinot will further evolve with additional cellaring to 2020. If pouring now, aerate/decant one hour and pair with well-seasoned, rare-cooked meat or a slowly-simmered chicken cacciatore. (Louise Boutin)
